At the appointed time, we'll meet in the center of Naples to visit one of the city's traditional pizzerias. Pizza is a cornerstone of Neapolitan culture, and we'll learn its secrets from an authentic pizzaiolo.

During the workshop, we'll master all the steps of making traditional pizza, from dough preparation to wood-fired baking. We'll also uncover secrets like the best flour, yeast, dough resting time, rolling techniques, tomato choice, and oil addition.

We'll delve into the fascinating history of this dish. In the late 19th century, Raffaele Esposito prepared a pizza for King Umberto and Queen Margherita of Italy. The Queen favored a pizza topped with tomatoes, mozzarella, and basil, representing the Italian flag's colors.

Greca Tip: While modern pizza originated in Italy, its roots trace back to Ancient Greece and Egypt. Greeks baked flatbread with herbs, garlic, and onions. It wasn't until the 12th century that Neapolitans added tomatoes, creating the first version of today's pizza.
